Kim Chuy Tang was the founder of Kim Chuy Restaurant. He was born in China in 1929 and emigrated to Cambodia. He became a very successful and popular noodle maker in Cambodia during the 70’s. During the Vietnam War, a regime change in Cambodia caused the Chinese to become persecuted so he and his family fled to the United States. While living in Chinatown, Los Angeles he worked at the Mayflower Restaurant until he decided to open up his own shop. Taking on large debt, Kim struggled for years until he was finally able to make a profit and live the American Dream.
