Kim Chuy Tang was the founder of Kim Chuy Restaurant. He was born in China in 1929 and emigrated to Cambodia. He became a very successful and popular noodle maker in Cambodia during the 70’s. During the Vietnam War, a regime change in Cambodia caused the Chinese to become persecuted so he and his family fled to the United States. While living in Chinatown, Los Angeles he partner with a friend to open their restaurant until he decided to open up his own shop. Taking on large debt, Kim struggled for years until he was finally able to make a profit and live the American Dream.
